Why not use the Change Management Pack? Besides that it has some great features like for example comparing schemas in different environment (devlopment vs production), it also has "Quick change" which can be described as a "super alter" and will allow you to rename column, delete/insert columns. Of course, it does do something like what you suggest (creating a new table and copying data) but it takes care of it for you and you don't have to think about dependent objects.
