With a background like your wife's, I would think she could easily transition to the Java world. You are right in realizing that the market is quite tight and is also very specific in its requirements. She could do pro-bono work (which I think you are suggesting), but it's unlikely that she would be exposed to all the server-side technology she needs to come up to speed on unless it were a well-funded project. So you have to find just the right outfit to volunteer time to.

One suggestion is in university-affiliated venture capital projects (meaning: commercial ventures backed with and/or owned in part by academic experts in AI, etc.). Sometimes they are looking for people to work for nothing or very little in exchange for equity. Also, many universities have some kind of reach-out to the business community and such an office might provide a referral to a business who has approached the university for talent or consultants in either building its product or in developing its business plan.
