How large was your database, what version and what platform? I dropped columns many times on 8.1.6 Linux and Solaris on a small (2G) database from tables which were not analyzed and did not see any adverse effects.

One thing we have found (the hard way). You need to analyze the table in question before you drop the column. We haven't noticed much difference dropping one column as opposed to multiple columns, but we have had the database freeze if the table was not analyzed.
