Depending on what you want/need in the course, you might want to look at Oracle's new XE product.
Although it has the same core engine as the Standard and Enterprise Editions, the Java related and enterprise management related features have been trimmed. As a result, it's very light weight (150M download, but Linux/WIndows only), ideal (and legally free) for teaching basic transaction processing, SQL and PL/SQL.
If you need more capability, then go for the Enterprise Edition and look at Werner Puschitz' site for good instructions on how to set up, configure the Linux for Oracle, and install Oracle. http://www.puschitz.com
