We have up to 7-10 databases running on a single box and they're all
'production'.
The only way I would see this as 'not recommended', since each database has an overhead--memory, cpu, disk space, dba time, backups, etc, etc.
The benefit of having separate instances is if one app goes bad, it could be isolated to a single db.
