what character set?

Hi,

I have a DB which at present uses USASCII7 character set. Eventually, I will want to store news articles in the DB in several languages. I remember reading that a DB's character set cannot be changed once the DB has been created (is this true or did I dream it?). Is there a character set that I can choose now, that will allow me to enter stories in any language in the future (eg, Japanese, Chinese, Norwegian, Spanish, etc).
