At OpenWorld we had a table where we spent every morning installing RAC on people's laptops. It's possible to run 11gR2 RAC with 4G of memory, but 3G was pushing it. We even tried on one or two machines with 2G... that didn't work. :) Don't configure less than 900MB in the VMs... I have successfully done 11gR2 with 760M per VM but I had some problems to overcome on the way.

This being said, if you get more memory then things will go easier. Also you can do things like run more than 2 nodes. And one final consideration is whether you want to use this laptop for other things as well... for example if you're going to run Eclipse or something at the same time then you'll need more memory to support it. (Or another example - a web browser with many open tabs/windows can use quite a bit of memory.)

In addition to this, I'd strongly suggest getting a second hard drive to spread the I/O. (USB2 is fine - you can get a 300G disk that's powered through the USB cable for about $40.) The RAC Attack wikibook that Kish mentioned is a great resource for running RAC on low-end laptops. Tim Hall's site also has some great tutorials, though he uses a bit more memory.
