Hi,
Yong Huang gave me the correct way to go, see How To Change Timezone for 11gR2 Grid Infrastructure [ID 1209444.1]. Once the required change has been made to $GRID_HOME/crs/install/s_crsconfig_<nodename>_env.txt and the ohasd re-started, the timezone specified in the aforementioned file kicks in when that database comes back up.
