Am I missing something? Is there an advantage in doing all of this rather than just, as the metalink suggests (and I *hate* to side with metalink on *anything*), drop and re-add the node?

I think it's officially not supported, but it's possible, if you follow the procedure here:
http://www.pythian.com/blogs/482/changing-hostnames-in-oracle-rac
I used the above to rebuild CRS without having to reinstall, after changing hostnames and cluster name.
It worked well for me.
