Good questions (I'm no expert either). I've done both things and they seem to be working fine. I did verify that the UID/GIDs match up appropriately.

I'm certainly no expert on NFS for Oracle, but have you verified that you can indeed manually mount the openfiler exports and write a file to them, outside of the Oracle stack? Are you using a local LDAP directory for granting permissions on the openfiler, and if so, do the uid/gid's match your CentOS uid/gid's ?
