You can audit selects, updates, inserts, etc. on tables. Actually there are a lot of features to auditing, take a look at http://download-west.oracle.com/docs/cd/A87860_01/doc/server.817/a76965/c27audit.htm#272

(This is chapter 28 of the concepts guide, covering auditing.)
