I agree with the others...
Asking a contractor for a pile of documentation at the end of the project may or may not be well accepted... If he's paid by the hour he may not mind, if it was fixed price then he may develop a hearing problem.
Having said that... If you do have the luxury of naming documents then I would suggest a capacity plan that includes both initial sizing and growth estimates broken down to a good level of detail. It amazing how often people don't even consider this when building an application with a tiny amount of test data.

The list of documents should have been established
before the contract was signed.
A professionnal contractor would have told you that.
The contractor must follow your methodology and give you the same documents as your internal IT teams.
On the DBA side, you should expect :
database architecture, logical data model, physical
data model, naming convention, backup and recovery
guide, security guide, a benchmarking document (if
some benchmarking was done).
