We don't have a Hitachi SAN in-house, but have been doing a lot of research on them. I'm pretty sure that there is no default RAID level. It should have to be set when new disk packs are added in. I do know they support RAID-0 & 1 levels. Hopefully you're still at the point where you can influence their setup.

I am at a new customers site and they are in the process of migrating
there databases to a Hitachi SAN over the next few months . Not quite
sure
which model
Is there any things that are known gotcha's, I am expecting that this
thing will configure all of its volumes with raid 5 unless Hitachi is
told
to do otherwise.
They aren't really a high performance site this is more part of there disaster recovery/prevention strategy, so I am not really expecting any performance issues for them
