Try using TRANSLATE function:
select TRANSLATE('THIS IS A VARCHAR2',' ','_') from THIS_TABLE;
> I want to display a varchar2 field that contains spaces
> between words i.e
> MY NAME, but replace the spaces with underscores on the
> report i.e MY_NAME
