I don't think there is many select *, generally most people (as well as oracle currently) name all the columns.
Even without doing this, unless your doing something wierd, ussually the columns are not touched, although I would not recommend making this change and would infact use a joined view.

Just think of the internal code that uses
SELECT * from USER_TAB_COLUMNS;
after you add a column.
