Moving from WE8ISO8859P1 to UTF8?

We are in a situation, due to a 3rd party tool requirement, where
we have to rebuild some databases to change the characterset from
from WE8IS08859P1 to UTF8.   For anyone who has done thi could you 
provide information as to consequences of the rebuild, cavaeats/experience 
with UTF8, etc?
