Snapshot too old

We are having trouble exporting a database with several large, insert-active tables. Exporting these tables causes a 1555 "Snapshot too old" error. The error message says use larger rollback segments. I doubled the size of our rollback segs but I don't want to make them all bigger just for one occasional export.

Is there a way to create a and use a very large rollback segment just for the export? How would you approach solving this problem - this is a production database and taking it off-line is probably not possible.
