I believe that Emirates use the Oracle Financials. Their implementation team became Mercator http://www.mercator.com/ who are specialists in Oracle Applications implementations for the airline industry.

I have no commercial links to either organisation, but I worked with Mercator on the Oracle Applications implementation of Financials and HR at Virgin Atlantic during 2003, which went live on time and within budget.
