There is no substitute for experience - get on a good project with a good team, roll up your shirt sleeves and get stuck in. When you hit a problem that is beyond you:
ask your colleagues for their help and advice - any good team will be prepared to share their knowledge and experience with you,
search MetaLink - there is a frightening amount of information there about all things Oracle. There are forums for the individual applications. There are eTRMs (electronic Technical Reference Manuals). Any organisation with a licence for Oracle products (and a Support agreement in place) can give their employees (and contractors) access to MetaLink,
search the OraFAQ forum (and don't be afraid to contribute when you can),
look at other forums, such as ITToolbox,
ask if your organisation has access to additional training materials, such as CBT courses. I have frequently found CBTs for the Oracle Database, SQL, PL/SQL etc., but I must confess that I have not found very much for APPS.
Good luck. And remember what I said - there is no substitute for experience - go get some and enjoy!
HTH
David
