Try shutdown abort - it will be MUCH quicker. However, you need a normal shutdown(shutdown) to get a cold backup. You should only do shutdown abort to kick people off and the database down quickly, then shutdown the listener(lsnrctl stop) and startup the database(startup), let it do its recovery, then (shutdown).
