How about reading the documentation? If you take a look at the documentation CD for the Oracle E-Business Suite you will find manuals such as

- Oracle Lease Management API Reference Guide
- Oracle Student System Open Interfaces User's Guide
- Oracle Order Management with Process Inventory API User's Guide
- Oracle Process Manufacturing Formula API User's Guide
- Oracle Process Manufacturing Inventory API User's Guide
- Oracle Process Manufacturing Process Execution API User's Guide
- Oracle Process Manufacturing Product Development Formula API User's Guide
- Oracle Process Manufacturing Process Planning API User's Guide
- Oracle Process Manufacturing Product Development Recipe API User's Guide
- Oracle Process Manufacturing Quality Management API User's Guide
- Oracle Order Management Suite APIs and Open Interfaces Manual
- Oracle Trading Community Architecture API User Notes
- Oracle Common Application Components API Reference Guide
- Oracle Workflow API Reference
In addition a lot of APIs are documented in the relevant user's guides for the applications themselves.
