Hi,
Currently I do not find any books on Oracle Financials 11i, but you can check up the OCP book for Oracle Financials from Tata McGraw Hill : Title is ORACLE CERTIFIED PROFESSIONAL FINANCIAL APPLICATIONS CONSULTANT EXAM GUIDE : ALLEN, CHRISTOPHER, CHOW, VIVIAN. This is an excellent book I have ever come across. This is for Oracle Financials 11.0.
Though the OCP track for Oracle Financials is removed, this book is still available in the market. This covers GL, AP, AR, Purchasing, Order Entry, Cash Mgmt, Workflow, alerts, Assets and Sysadmin.
There are also handbooks on Oracle Financials, but I do not suggest it for beginners.
Another good source on the net is http://sandbox.aiss.uiuc.edu/oracle/nca/index.htm
although this provides documentation for 11.0 only :-(
