What versions of Oracle 8 exist? Is there a version of Oracle numbered '8.7'?

8.0.6 is the hihgest (for 8.0.x), then you go to 8.1.5, 8.1.6 & 8.1.7 (for 8.1.x)

But does 8.7.x exist or is 8.1.x the last of the versions in the 8 series of Oracle?

No, there is no version 8.7.x
