Is it possible to

SELECT foo
INTO bar
FROM table
WHERE baz LIKE '%stuff%';

where baz is a LONG datatype?

No, LONG goes up to 2 GB. In PL/SQL though, LONG variables hold up to 32k. If your data is less then that, then see the following...

in PL/SQL , if declare the variable bar
as Varchar2, it can handle upto 4gb.
