You have to have two tnsnames entries in your iAS installation, one for
shared, one for dedicated. Depending on which tnsnames entry you use in your
app, the corresponding server is used.
If using JDBC thin drivers (no oracle client installation nor tnsnames.ora)... there might be some parameter in JDBC drivers for configuring which type server process to use, but using two listeners might do the trick as well.
