I'm thinking that running an export would affect other users of the database trying to access those tables being exported - can someone point me to documentation concerning?

Export is of a single user, full=n direct=y.

Not sure what you are looking into.

You do not want to export by that time then!.
I would use CONSISTENT=Y.

We have a job that runs longer then expected and I am looking into all the various factors that may affect it. One thing I found was that we have an export that is running when they kick off their job. So I was trying to find documentation that explains or demonstrates locks etc. during an export.

In Oracle Readers do NOT block Writers & Writers do NOT block Readers.
