Hi,

I need to get SAR stats into some form of graph to show daily usage. can anyone help with any utilities that will take the sar files and collate the data.

A rudimentary approach is to format the output and write a .csv file and then load into excel.
sar -u 3 3 | tr -s ' ' ',' > t.csv

If you have lots of time, you could do something similar using html_db - see this example.
